Solution:

To take a Touch Bar screenshot and...

• ...save as a file on the desktop: Shift-Command-6
• ...copy to clipboard: Control-Shift-Command-6

The shortcuts in the solution above are defaults. They can be configured by going to "System Preferences" -> Keyboard -> Shortcuts -> "Screen Shots", and setting new shortcuts.
